"Nice talking to you" x ''Nice to talk to you''

Hi everybody!
I've got a little doubt about the use of the -ing in this sentence: "It was nice talking to/with you" and I'd be very thankful if you could help me. :-}
I've learnt that after adjectives we use 'to + the infinitive': Nice to meet you; It isn't easy to find a job; etc.
But I've seen people on the Internet using 'It was nice talking to you'. I'd like to know if there's a specific reason to use the -ing in this sentence or if there's any difference between 'adjective + talking to you' and 'adjective + to talk to you'.
