Na frase, "have" é usado no sentido de "dar / organizar um evento" (no caso, o funeral).
...when and where we were having it = quando e onde nós fariamos o funeral / quando e onde seria o funeral.
...when the funeral would be and where we were having it = quando e onde ocorreria o funeral.
Em inglês, pode-se dizer "to have a party" (dar uma festa), "to have a charity dinner" (organizar um jantar beneficente), "to have a celebration" (fazer uma comemoração) etc.
