Como eu sei quando usar very ou much?

much (muito, muita) normalmente é usado antes de substantivos não contáveis.
e também em diversas expressões.
Ex: I haven’t got much time to jokes.(eu não tenho muito tempo para brincadeiras).
There was much milk in the glass.(havia muito leite no copo).
He doesn’t have much luck. (Ele não tem muita sorte).
very much (muito+muito=muitíssimo)

very (muito ou mesmo)
Quando se traduz muito ele não vem antes de um substantivo.
Ex: I’m very sorry. (Sinto muito).
not very much (não muito).
the very best (o melhor possível).
at the very latest (o mais tardar).
Traduzindo como "mesmo".
Ex: at that very moment. (naquele mesmo momento).
