No seu exemplo "better" é adjetivo, está dando qualidade a um substantivo.
Seria adverbio nesse exemplo:
She sings the song better than me.
She sings the song better then I do.
Better no exemplo à cima está dando qualidade ao verbo cantar.
Assim como na frase: "You play tennis better than I do." Better está dando qualidade ao verbo jogar.
