Estive vendo que quando perguntamos e você, podemos usar: And you? How about you? What about you?

Existe alguma diferença de situação para utilizar cada uma delas ou são sinônimos? Se houver diferença por favor me exemplifique!

I am going on vacation this summer.
- And you? What about you? How about you?

Me? I am fine, thank you.
- And you? What about you? How about you?

I am getting sleepy. I think I'll go to bed.
- And you? What about you? How about you?

The three responses sound normal to me. Am I missing something?

Creio que todas são sinônimos, elas se adequam nas mesmas situações, mas nunca vi a forma "what about you".
  • What you did last month?
  • I went to the beach, and you?
  • I went to the beach, how about you?
I have a friend which is an addicted in using what about you.
Almost never she can say anything without asking me, what about u?

It can happen. Years ago I was addicted to "you know". I drove people nuts. I live in Costa Rica where the word "mae" is used like "cara" in Portuguese or "guy" in English. Mae, you won't believe, mae, how many times some maes use the word mae in a sentence, mae.

A new slang word here is "mop". It comes from "mopri" (primo), and is used to mean "friend". "Mop, ¿adónde vas, mae?"

What about pode ser traduzida como "e quanto a" como em how about?

what about Brazil? are you guys gonna to win the world cup?
E quanto ao Brasil ? vocês vão ganhar a copa do mundo?

what about your brother? is he ok?
E quanto o seu irmão? ele está bem?
What about ...? -> E quanto a ...?
Exemplo: I am going to the party, what about you? - Eu estou indo para a festa, e quanto a vc?

How about? -> Que tal?
Exemplo: It's a sunny day, how about going to the beach? - Está um dia ensolarado, que tal irmos à praia?
Me explicaram uma vez que "How about you" é informal e não é usado no inglês escrito, só no falado. E "what about you" pode ser usado na escrita ou em conversas mais formais. (Mas eu não sei se está correto, ok? Porque nunca consegui achar uma explicação sobre esse tema também, e como quem me deu essa explicação não é falante nativo do inglês, eu fiquei um pouco com "o pé atrás".)

Sobre o "and you" eu acredito que seja bem informal mesmo, mas isso é um palpite meu.

I disagree. Unfortunately that's a misleading explanation. See what Merriam-Webster and other reliabe sources say:
What about [=how about] coming with us?
What about driving to the coast for the weekend?
We'll need to talk about this again. What about (meeting) next week?
What about another game? [=would you like to play another game?]
What about having another drink?
How about a break?
How about going for a meal?
How about we go for a meal?
We'll need to talk about this again. How about (meeting) next month?
How about [=what about] driving to the coast for the weekend?
How about another game? [=would you like to play another game?]
What should we do tonight? How about (seeing) a movie?
How's about some more pie?
How about a cup of tea?

Não percebi a diferença ainda.
I am a not English teacher, but for me I got that :
What about : Que tal
How about : e quanto a
And you : e você

For exemplo:
- What about we go to the movies and watch a scary movie ?
- I don't like scary movies
- How about a comedy movie ?
- Yes, I prefer

Ao incluir YOU acredito que fica a mesma coisa pq se refere a outra pessoa:

-How are you?
-I am fine, and you ? - Estou bem e voce ?
I am fine, how about you? Estou bem e quanto a você ?
I am fine, What about you? Estou bem e que tal você ?

De todas as formas com "you" você pergunta SOBRE a outra pessoa, por isso acredito que encaixa o about.
