Sugiro "environment school".
''Yale's Environment School.''
"The Powys centre, which is a registered charity, has an environment school providing specialist postgraduate courses.'' [BBC - UK]

You've got many options:
School of Environmental Sciences
http://www.uoguelph.ca/ses/
School of Environmental Studies
http://www.queensu.ca/ensc/index.html
(McGill) School of Environment
http://www.mcgill.ca/mse/
School of the Environment
http://www.environment.utoronto.ca/
I would use "environment school" only to explain what it is, like in Donay's example, not as the title of a school. Yale's environment school is actually called "The Yale School of Forestry & Environmental Studies".
