Na versão mais antiga da Disney, ela fala : Magic mirror, on the wall – who is the fairest one of all?

Por algum motivo a fala: "Mirror mirror," se tornou mais popular.

"Mirror, Mirror" tem se tornado mais popular. Inclusive, há um filme baseado na história da Branca De Neve com esse nome

Por que nesse caso o adjetivo "fair" que seria justo e no superlativo algo como mais justo é usado como mais belo? No conto ao que realmente a rainha queria se referir se havia alguém mais justa ou bela que ela ?

"Fair" é uma palavra que também pode ser usada para se dizer "bonito(a)", "belo(a)". No entanto, este uso é antigo e típico de obras literárias, como esta da expressão em questão.

Do Oxford Dictionary: Fair: (literary or old use) = beautiful.

• The knight thought his lady was very fair. [O cavaleiro achava sua dama muito bonita.]

Nos dias de hoje, é melhor usar "beautiful", "pretty", etc.
