Acho que to be busy também pode ser usado como enrolado/ocupado/atarefado.
Mas esse frasal verbo to catch up on é muito bom também.

Você também pode utilizar:
- I'm in a hurry/rush (Estou numa correria)
- I'm kind of busy (Estou meio que ocupado)

"Desculpe-me mas eu não posso ir ao seu churrasco que eu estou enrolado até o pescoço no trabalho aqui."
On top of "pile of work to catch up on" as Marcio Farias proposed, you can also say "up to my neck/ears in work" or, more generally, "I have a lot on my plate", "I have a full plate", "I have my hands full with (work/kids, etc)", "I have other/bigger fish to fry", etc
"Meu namoro anda enrolado mas acho que eu vou terminar."
"My relationship is a bit shaky" would be a good match I guess, although more in the sense of being unstable.
"Eu não consigo jogar bola mais porque eu ando bem enrolado com a faculdade".
"I'm not playing football anymore cause I'm finding it hard to juggle it with college". That's more in the sense of being able to cope with two or more things. But also similar to the first sentence "have my hands full with college", "have enough on my plate with college already", etc

Summing it up. There are two senses of (enrolado) ocupado.
That of busy, with work to catch up, etc.
Then, that of " juggling, having many irons on the fire (foco mais no "enrolado", você se "enrolou" - (foco mais no "ocupado"), perhaps you took on so many tasks at the same time (sometimes on a whim, out of impulsivity, to help others, or undersestimated the completion time).
