A minha maior dúvida está em saber se é correto dizer: "I do not have time to see you" , ou se é unicamente correto dizer: "I do not have the time to see you", conforme eu ouvi de uma professora de inglês, no youTube.

Eu prefiro dizer "I don't have time to see you".

To me using "the time" seems a bit more formal or cold (and consequently could be considered by some to be less polite)
As ever, it depends on the context.

All of Donay's sentences are grammatically correct. The use of the article "the" is optional and is usually omitted. The last sentence: "I have no time to see you" represents an emphatic construction and sounds less polite.
