I read from a discussion on a site that "do you have any change?" is okay in some informal settings. Though, not grammatically correct in informal ways, it can be accepted.

This answer is more on the colloquial side; say, for example a street vendor or something like that at the street, or a seller at the grocery store, etc. Then the produce, product, good is "right there", so we can refer to it by using "it´s".

"That´s" would be normally to refer to something more remote or far from the speakers.

Quando você fala: " I think "it's 5 dollars would do", creio que a tradução de " would do" nesse caso não é faria, qual é a tradução?

Com "would do" eu quis dizer "seria apropriado/adequado/indicado". Por que outros poderiam ter outras idéias, opiniões, usar outras palavras (o próprio "that", por exemplo).
Portanto eu não quis ser categórico, contudo quis dizer que é altamente indicado dessa forma. Claro, na minha opinião, e considere a de um bom aluno de inglês, não de um linguísta ou professor ou profissional de educação, etc. Mas "fat chances" que eu esteja certo no presente caso. Vamos esperar por mais opiniões que corroborem, retifiquem ou complementem a resposta.

Uma coisa mais: gosto de fazer com que o autor da pergunta aprenda algo mais, faz parte da jornada de aprender inglês. No presente caso parece que consegui!
