Simon, use the plural. "To burn a bridge" is not commonly heard, but it exists when it refers to a particular subject (a job, a girlfriend, etc.) Typically, people say "to burn one's bridges".

I didn't want to burn any bridges, so I was nice and sweet with the boss when I left my old job.
