"Que meus sonhos sejam maiores que meus medos", em inglês. "That" me soa estranho no início da frase.

May your dreams be larger than your worries. (my loose translation)

But there´s already an equivalent version of that in English: I hope your dreams stay big and your worries small.

In practice the end result is the same.

Hello, my friends.

You might want to read these topics:

(1) Concrete and abstract nouns
(2) Big x Great x Large (2)
(3) Is fear a countable or a mass noun?

According to Longman Dictionary, the adjectives large and big are used to describe size. The adjective large is also used to describe quantity. However, when we make references to the importance and quality of something, we should use the adjective great.
_

Another possible answer:

May my dreams be greater than my fears.
>> Que meus sonhos sejam maiores (do) que meus medos.
>> Que meus sonhos sejam maiores (do) que meus temores.
