Acabei de ler a seguinte frase em um livro didático:
Do you know what´s the color of the apple?
No entanto, a forma correta não seria:
Do you know what color the apple IS????
Ou estou enganada????
Do you know what´s the color of the apple?

Acrescentando um pouco,seria como em português dizer:
Você sabe qual é a cor da maçã?(Do you know what is the color of the apple?)
Você sabe de que cor é a maçã?(Do you know what color the apple is?)

A sua oração pode ser dita de 3 maneiras, na ordem que me parece do mais usado ao menos:
1. Do you know what´s [what is] the colour of the apple?
2. Do you know what colour is the apple?
3. Do you know what the colour of the apple is?
Seria estranho ouvir "the apple´s colour" na sua sentença acima. Mas seria comum se fosse em outro enunciado, por ex.::
"I really like the apple´s red colour."

Agreeing with Donay, I would add from personal impression that it' may be more common to hear the verb attached to what ("what´s") than to hear the verb separate and placed last in an utterance. It´s simpler, faster, and more direct. In any case, you should feel comfortable saying or writing it either way.

É poosível de se dizer "what is the color of..."

Existem diferentes abordagens,é importante dizer isto.Mas em geral quando os possuidores não são pessoas ou animais usa-se "of".É possível de se dizer "the sun´s rays","the moon´s surface",mas em resumo é assim.
