Nem sempre lack of vai funcionar. Em expressões como Que falta de educação! ou Que falta de respeito! não é natural usar lack of politeness ou lack of respect.

Que falta de educação!: How rude!
Que falta de respeito!: How disrespectful!
Que falta de sorte!: How unlucky!

Então, tenha cautela ao generalizar na hora de traduzir. O inglês vive pregando peças.

O Lack não é tão rígido assim, sugiro que procure mais exemplos quanto ao uso. Algumas vezes é comum se ver o Lacking de algo ou mesmo the lack of something, o contexto sempre manda!

Okay, "lack of" to almost everything, but then:
"lack in good taste" meaning deficiency not physical shortatge (falta de gosto/mal gosto)

Lacking in is an adjective (grammatical structure: lacking in + noun phrase), meaning “missing” or “absent”:—

Hospital found lacking in patient efforts satisfation...
Some hospitals lacking in language assistance.
It was a well-built boat but lacking in navigation equipment.

Back to the crux of the question, yes, "lack" is used to everything one could think of, but sometimes with slightly different meanings: in short supply, shortage of, in need of, inadequate, deficit, scarcity, poverty...

One instance of that is that "someone with the lack of vitamin D" doesn´t mean someone with zero stock of it, but with deficiency of it. Or in need of it, if you wish.
