Vejo que "Let it go" é uma frase muito usada na lingua inglesa, mas o correto não seria "let it goes", por causa do it?

O correto é let it go, porque o verbo to let, segundo a regra gramatical, é sempre acompanhado por um verbo no infinitivo sem o to.
Let me stay here with you. (Deixe-me ficar aqui com você.)
