Slipa,
I was / I had been explaining when alex asked a question.
"Was" indica uma ação mais recente naquele momento. Neste contexto, "I was explaining when Alex asked a question" é a forma que recomendo.
I didn’t eat yet / I haven’t eaten yet.
"I haven't eaten yet" é a forma gramaticalmente correta. Porém, "I didn't eat yet" é comum em inglês americano. Veja um exemplo do Oxford Online:
I didn't receive a letter from him yet. (North American English)
