Quando usar "Pop" como "Pai" em inglês
Escutei um ator chamar o seu pai de "Pop" na série Empire.
Quando devo utilizar "Pop?" Nunca tinha escutado dessa maneira e não encontrei nada na Internet sobre isso.

Yes, it can be, it´s colloquial for father, as an alternative to "dad/daddy".
You can see it usually when used to describe family-owned business, generally small shops etc.

Some people also say ''papa'' to call their fathers haha that's cool
Sinceramente em todo meu tempo em que morei nos Estados Unidos, nunca ouvir ninguem falar Pop para se referir a pai, porem, possa ser que nessa série que você assistiu isso seja um tipo de apelido como por exemplo aqui no Brasil algumas pessoas chamam pai de coroa.
I never been to the States, but the series/songs/novels I have seen have not "pop" in this sense as well.

Uma amiga que fala inglês há muitos anos me disse que talvez seja "pah" ou "paw" de "parents"
