Bake - é usado para alimentos que tem uma textura líquida, ou cremosa, e que depois do cozimento ela vai ficar sólida. Ex. Bolo, torta, cupcake.
Roast - é usado para alimento que já tem uma textura sólida, no cozimento vai ter o sabor alterado. Ex. Frango, carnes e vegetais.
