Ex: "She'll go back to work in about three months' time."
Gostaria de saber se, nesse caso não deveria ser "three-month time". Já que, ao meu ver, é um adjetivo caracterizando o tempo em que ela retornará ao trabalho. Queria saber qual seria a melhor formulação desta sentença.

This is called the genitive case - or possessive case, but it doesn't mean actual possession here. It's about a word changing the meaning of another one.
And yes 'three months' time" is correct.
