Olá experts, estava jogando um jogo online e no final do jogo apareceu
a mensagem "Time's up", fui em um tradutor online e a tradução foi exatamente "O tempo acabou". Por que time's up e não time's over? Essa é a minha dúvida.

"Time's up" é uma expressão fixa, e possui o significado que você mencionou. "Over" é empregado em referência a situações ou períodos de tempo ("the meeting is over", "the interview is over", "war is over", "summer break is over", "the week is almost over" etc.), mas não em referência ao tempo cronometrado designado à realização de uma tarefa. "(Your) time's up" é a forma padrão neste caso. "Time" e "over" podem aparecer juntos, mas em contextos distintos, como em "fun time is over" ou "the time for jokes is over". "Time's over", sozinho, faz pouco sentido.

Time's up is a phrasal verb which consists of a verb and a preposition or adverb that modifies or changes the meaning.
EX: 'give up' is a phrasal verb that means 'stop doing' something, which is very different from 'give'.
So, if you translate it to portuguese it will make no sense.
I can't say for sure if "time's over" is completely wrong, though.
