"Catch up" não significa apenas "colocar o papo em dia". O contexto pode mudar isso. Inclusive o contexto da pergunta deste post. Além de "botar o papo" em dia, temos:

1. To go faster so that you reach the person or vehicle in front of you. [= alcançar]
We left before them, but they soon caught us up again.

Catch up with: If you hurry, you should catch up with them at the bridge.

2. To improve in order to reach the same standard or rate as someone or something
He's missed so much school that he's going to find it hard to catch up. [= pegar o rítmo, ficar no mesmo nível]

Catch up with: Pressure grew for salaries to catch up with inflation.

3. To do something that should have been done before [= recuperar, alcançar, acompanhar, "tirar o atraso"]
The deadline's tomorrow. How are we ever going to catch up in time?

Catch up on: I just want to go home and catch up on some sleep.
Catch up with: Staff are struggling to catch up with the backlog.

4. To talk to someone you have not seen for some time and find out what they have been doing. [= colocar o papo em dia]

Como o mundo não se transformou em gelo, imagino que ele quer dizer "no futuro" (daí o "depois". )

Realmente, sem um contexto maior, "Ice Age" não me diz muita coisa além do desenho ou da definição padrão.

The key is the "if we should" part.

Here it certainly means "should we catch with the rest of the world." (se quisermos alcançar o resto do mundo/se tivermos de recuperar o tempo perdido [ou o nível progresso perdido etc] em relação ao resto do mundo/se quisermos acompanhar o resto do mundo, e por aí vai...

Temos muito a colocar em dia (temos muita conversa pra colocar em dia/temos muita coisa pra pôr em dia).
In other words - "há muita coisas pra pôr em dia aqui, há muito a se fazer, talvez as atividades estejam atrasadas (ou esteja no início mas vai ser uma longa jornada.../há muita conversa pra pôr em dia...etc.

Firstly, I think it would come across to a native
English speaker as fluent like this: "I have a question, could it mean...? Or "I have a question, could it be used meaning...?".
Anyways, yeah, it could. Just add "with" there. "...catch up with...".

I would also expect something like "I am unable to catch up on her channel content/channel shows, etc".
Or "I am unable to to catch up on her Youtube channel", I mean, elaborate, give more specifics about "channel".
