Eu estava vendo um vídeo e o criador de conteúdo falou "I started learning korean language in like 2015, 2016..." por que ele usou o like e qual seu sentido na frase? (ele esta sendo usado como qual tipo de classe gramatical?)

Linguaguem informal, o LIKE foi usado nesta frase com sentido similar ao TIPO em Português... "Comecei a aprender Coreano, tipo em 2015 ou 2016"

Yes, and it would convey the same as "I started learning the Korean language around the time of 2015, 2016..."
'Like' there means imprecise but close to the date, it's an approximate time.
Korean should start with capital K, as we do with names of languages (when written in English, I mean). But they make exceptions in colloquial, I would say very informal cases.
