Eu não estou conseguindo entender plenamente o significado de "If anything" muito menos de encontrar uma palavra ou expressão de igual valor...
Já li o post sobre tal dúvida, mas ainda sim ela permanceu...
Outra dúvida é sobre a referência "one" marcado em negrito, pela minha interpretação parece se referir a "literatura", porém o contexto me joga para
"os contos do livro"
E por último, mas não menos importante, o significado de polished up seria polir realmente?

Contexto : (Introduction) They were works of low culture—very unlike the stories of valiant knights and holy saints that the rich paid poets to compose in the Middle Ages, or later literature that was judged by the sophistication of its references and allusions. For centuries, fairy tales were usually considered outside the bounds of refined taste. This isn't to say that people weren't interested in them — they certainly were —but fairy tales weren't the sorts of things about which serious people wrote serious, learned essays like this one. If anything, they were raw material to be polished up into works of "real" literature.

ONE = parece se referir a redação/composição de onde se extraiu este trecho postado.
IF ANYTHING = expressão frequetemente usada para indicar desvio, escolha, contrariedade a algo, do contrário, pelo contrário.
POLISH UP = melhorar, lapidar, improver, refinar, terminar.

Sugestão de tradução.

' Elas eram trabalhos de pouca cultura, bem diferentes das estórias de valentes cavalheiros e santos pelas quais, na idade média, os ricos pagavam aos poetas para escreverem, ou da literatura de mais adiante, que era julgada pela sofisticação das referencias e alusões. Por séculos, os contos de fadas frequentemente eram considerados impossíveis de serem de gosto refinado. Não porque as pessoas não estavam interessadas neles - certamente estavam, mas os contos de fadas não eram os tipos de coisas sobre as quais as pessoas sérias escreviam de maneira honesta, elas aprendiam a fazer composições como esta. Pelo contrário, os contos de fadas eram tidos como materiais brutos a serem lapidados e transformados em 'literatura de verdade'.

Não se pode dizer/não se pode afirmar que aquele povo (aquela gente) não estava interessado neles (os contos de fada) - certamente estavam - entretanto contos de fadas não eram os tipos de coisas sobre o qual pessoas (escritores) sérios escrevessem seriamente. Ensaios cultos/bem elaborados/com alto rigor de linguagem, pesquisa e literatura como este - quando muito - eram meramente matéria prima (eram material não processado, cru), a ser refinado/melhorado e transformado em obras de literatural "real".

Considerações finais:
Into - significa que algo é transformado em algo diferente, no caso melhorado - por exemplo. Indicando que não é igual ao estado anterior, se você pega algo e traduz do português para o inglês "you translate it INTO English".
Segue-se que em "they were raw material [/b]to be polished up into works of "real" literature." nós temos uma pista, a de que os livros, os escritos ou ensaios sobre contos de fadas eram apenas algo cru, não era escrito á sério, e acabava sendo transformado "INTO" (em) outra coisa, em trabalhos de literatura "real".
Assim sendo, a parte que diz "a ser refinado/melhorado e transformado em (INTO) obras de literatura real.

Claro que o Google Tradutor, acertadamente, traduziu assim:
Se alguma coisa, eles eram matéria-prima a ser polida em obras de literatura "real"

Só não te explicou a função do INTO. Contudo fez uma tradução mais resumida, e o "polished up" que também significa "improved" em tal caso, apenas colocou concisamente "a ser polida"... Também um pouco mais acadêmico do que "melhorado" não é mesmo?.

"Se alguma coisa" e "quando muito" podem ser definições bem aproximadas, e certamente poderia se aplicar ao caso. Mas cuidado, não é sempre! Nesse caso sim são descrições bem aproximadas.

Mas tá bom, ele faz o trabalho dele e nós o nosso. E você deve ter ganhado conhecimento com isso!

Eu havia tentado usar otherwise como sinônimo, porém soou muito errado...

I agree with you on that one, "otherwise" wouldn´t be a proper word to mean what you wish (most of the time when you feel something is "out of place" or "mismatch" your feeling - or instinct is right). So, your instinct is right on that one.

Do you want an equivalent, okay, you could use "on the contrary":
Her success hasn't caused tension - if anything, it's helped our marriage.
Her success hasn't caused tension - on the contrary, it's helped our marriage.
(lembrando que IT´S aqui significa IT HAS - então "it has helped our marriage."

Another way to say that:
Her success hasn't caused tension - the opposite may be case - it's helped our marriage.

I must point that sometimes the "if anything" isn't so apparent at first. Because sometimes "it is used to suggest or state tentatively that something may be the case (often the opposite of what was just statet).

The situation is, if anything, worsening rather than improving.
Here we could say that the other people previous statement (or what he/she expected to listen was that the situation was improving)
So, it could be replaced by "on the contrary" or "it may not the case" right away (but the answer could be seen as impolite, even arrogant.)

“Do you think she’s tall?” / “Oh, no. If anything, she’s short.”
Oh, no, (here is the clue), it means "on the contrary" or "I don't think so", but saying that straight away also could be impolite.

“Do you think she’s tall?” / “Oh, yes. If anything, she’s very tall.”
Here's the "catch", notice that the person doens't agree with you, here it's the equivalent to '"I don't think so/I wouldn't agree with you on that one" She's very tall.

See, in the last one the person is saying "I think you are mistaken/you are mistaken", she isn't tall. She is very tall.

I found it worthy to bring this up because there is additional and important information. Well, at least to my thinking. :-)

"it may not the case" right away (but the answer could be seen as impolite, even arrogant.)
Se esta expressão pode ser considerada mal educada, ou mesmo arrogante, o que se diria de usarmos "It is not the case"? Este uso seria considerado somente para contextos realmente informais ou pode até mesmo ser desconsiderado devido a tamanha intimidade que se necessita para se cogitar a usar?

I would say that "if anything,..." would be a more euphemistic way to express himself in certain events. The fact of those sentences sound arrogant "would - or could - be in the eye of the beholder". What may seem to me, may not to somebody else, or in other circumstances.

Anyway, in the safe side, you wouldn´t be in the wrong by using "if anything" and it´s a fixed expression, you would show that you know something of (variety of)
vocabulary. ;-)
