Nao estou compreendendo direito qual o tempo verbal das seguintes frases:

Her being stubborn irritates me.

Como o Renato comentou, todo o trecho em negrito é o sujeito da frase.
Their having a baby now isn't a big surprise.
His using the machine made her job easier.
Her being stubborn irritates me.
Talvez o entendimento fique mais fácil se você pensar nas traduções abaixo:
Their having a baby now isn't a big surprise. --> O fato de eles terem um bebê agora não é uma grande surpresa.
His using the machine made her job easier. --> O fato de ele usar a máquina tornou o trabalho dele mais fácil.
Her being stubborn irritates me. --> O fato de ela ser egoísta me irrita.
