A diferença está muito mais na forma de usar do que no significado. Observe alguns exemplos.
He said(that) he is sick.
I said (that) they live here.
We said(that) you need time.
He told me(that) he is sick.
I told you(that) they live here.
We told them(that) you need time.
John told Mary(that) he likes her.
De forma resumida, "told" precisa de um objeto (me, you, them, John, Mary, etc). "Said" não pede complemento.
