Please, help me with one question.
During an exercise, I was writing an email about all the things I liked during a trip to another country.
In a specific moment, I wrote: "The country is very cold, and I'm not adapted to it".
Is there some error in this sentence?

No, that´s right as it is.
You could also express by "I am not adapted to such cold environment/climate/temperature". But what you wrote is okay, congrats!

I would tinker with the sentence a bit: "the country is very cold and I am not used to that."
I think the former may (or may not) suggest that the person means he/she is from a cold country origins, but it´s not used to this kind of cold! Just my opinion here, my two cents worth, others may think different.
