Esse " consider" parece ser tão tecnico quanto "gazing".

Num outro sentido, usamos muito "to consider". Por ex:

So, you can sit by the (train) window and take in the views in a journey.
I think "see" could be used as well, but it wouldn´t be that much poetical and convey/describe all the emotional feeling associated with traveling. It could be used anyway.
I like the description of the site Culture Trip as well about the train ride aboard the Serra Verde Express:
Peering out of the window leads your gaze to the grassy gorges that appear from behind the shrubbery at regular intervals, with colourful houses popping up along the way.
Aah, a train ride!
