I would just say that the verb"cover for" is more usual than "cover" when substituting for a colleague.
It sounds better to me to say I will cover for you, I will cover our class for you.

"I will cover you" sounds like you will place a blanket over someone to keep them warm.

Quando queremos dizer que um professor vai substituir outro em uma aula dizemos utilizamos o verbo "to cover"

Jake: Hey Jane, listen! Do you think you can cover me on next monday?
Mike: Yeah sure! not a problem.
Jake: thank's man! I owe you that!

Dessa forma, sugiro: "A teacher who is covering another one"

Ex: The teacher who was covering Mr. Brown last night really sucks.

The adjective alternative is referring to the method of certification, not the teacher, I believe.

I googled some synonyms of substitute and the search gave me one meaning I think it might suit.

'Alternative teacher'. But I do not think it is usual to use although my google search engine provided me some links in which were said there are alternative teacher's certificates.

Anyway, there it is.

We have professors that are on temporary contracts. They are not called substitute teachers,
they are adjunct professors.

Substitute teachers are instructors who work on a day by day basis to fill in when the regualar teacher is absent due to illness or conferences, etc. (Substitute teachers work in schools, not at the university level).
