Entendo que, se alguém está em reeducação alimentar, está em dieta; nesta esteira, a frase me soa contraditória. De toda sorte, segue algumas opções para "reeducação alimentar":
Dietary re-education;
Nutrition re-education;
Food re-education.

They also translate "reeducação alimentar" as "alimentary education"
I mean, in a more informal and day-to-day sense, hence outside of medicine and formal languages.
We changed the word“diet”, which presupposes a passing attitude, by Alimentary Education, that is an attitude for the whole life.
Other times they call it (that you are...) "having a good relationship with food" or "having a healthy relationship with food".

Back to Milaine question, my tack for the time being would be "I am not on diet, I am changing my relationship with food" (that is, from bad to good). OR "not on (weight) diet, but just careful what I eat." (sometimes a constrained eater with weight or health concerns).
I am not on diet, but eating in a balanced way (even those 'less healthy foods'. - it's not about what to eat, but how, when and why. So, that "eating in balanced way" had to be kept as a sustainable life style (as a whole)... Along with light exercise or 'keep moving'.
