Como se diz "Eu acabei de descobrir que isso é não é verdade." ?

A segunda frase é a opção gramaticalmente correta. Em "I just figured it out that's not true", há uma repetição desnecessária (e incorreta) do objeto ("it" substitui "that's not true" e vice-versa. Use apenas um dos dois, mas não os dois juntos).
No que tange à tradução, uma opção mais fiel à frase original seria "I just found out that's not true". Lembre-se:
To figure out = Descobrir intencionalmente, através do raciocínio.
To find out = Descobrir, de forma geral.

I would like to add a side note:
"turn out/turned out" (usually) has a ring of 'surprising" or "unexpected" to it. Sometimes a nice surprise, sometimes it's the other way around.
Plus, "turn out" also 'works' as an antithesis, making a contrast between what an event could be and what it unfolded, in retrospect - sort of.
Of course, very often when we say "it turned out" it means that something was found/discovered, etc.However, the reverse may not be true.
