My 2 cents (trying to keep faithful to the original meaning):

She is drop-dead gorgeous. Everytime I look at her my eyes get filled with delight...

Other possibilities:

- My eyes sparkle/ twinkle with excitement every single time I look at her.

Ao falar que algo é bom para você, pode se usar também "a joy to my eyes" - pelo menos eu já vi alguns falarem assim - mas quando foi outro que falou (como em reviews de filmes ou obras de arte, que alguns falam algo como "Aquela obra foi de encher os olhos") fica meio estranho e é preferível usar alguma das espressões que o pessoal colocou aqui. =)

Just a reminder that Donay's suggestion "a sight for sore eyes" can also be used to mean something ugly or not good to look at if used sarcastically
which can (and does) lead to confusion over the real meaning of this phrase.
