I am eager to meeting your sister.
I am itching to talk with your brother.
I look forward to visiting your uncle.

I am eager to begin work on the project.
I am itching to start the new job.
I look forward to working with you.

I am eager to be of help to you.
I am itching to give you a hand.
I look forward to being employed by this firm.

I am eager to master English.
I am itching to increase my knowledge of English.
I look forward to speaking fluent English.

exception!
I'm eager to it. NO!
I'm itching to it. NO!
I look forward to it. YES!
(Are going to the party? I look forward to it.)

Note that in most contexts these phrases are interchangeable, but "itching to" is less formal and more informal that the other two.
