"Two Sundays Ago" sei que não é muito usado, mas posso falar assim quando quero dizer eu fui a tal lugar sem ser domingo passado, mas no domingo anterior ao domingo passado?

Sim, é correto dize-lo desta forma tb, talvez você tenha estranhado o SUNDAY, mas se trocarmos esta palavra por Days/weeks/years, ela (a frase) nos torna mais familiar.

Think this way: if we say "last Sunday" it would be June, 11 (would be the 'first Sunday ago', then two Sundays ago would fall on July, 4th.
Notice that I meant it said on Monday, 12nd.
