Dependendo do contexto as duas podem ser usadas.
Present Perfect:
Yesterday I went cliff diving. That was the most exciting thing I've done. (Cliff diving is the most exciting thing I've EVER done in my life).
Past Perfect:
Last year I went cliff diving. That was the most exciting thing that I had done until I jumped out of an airplane. (Cliff diving WAS the most exciting thing I had done until it was surpassed by the excitement of jumping out of an airplane).
(Cliff diving WAS the most exciting thing I had done until it was surpassed by the excitement of jumping out of an airplane).
a 2ª, porque haveria concordância verbal (past perfect simple) entre uma ocorrência iniciada no passado (foi/era a coisa mais empolgante) e terminada no passado (tinha feito).
