Qual é a diferença entre Once e When?

For example:
  • Once you try Thai food you will want more.
  • You can pay for it once you get here.
  • Come over once you're done with your homework
  • Would it have a different meaning if I use when?

No, it wouldn't have a different meaning.

To narrow down your possibilities let's think that whenever the two words mean "as soon as" they can be used interchangeably. Since in those sentences this is doable (viável/possível) then it wouldn't change the meaning.
But remember, in the sense of "as soon as".
