Boa observação! É correto usar o "that's" como contração de "that has".
As únicas correções que eu faria na frase que você escreveu seriam essas:

Thanks God that's never happened with tome.

Thank God - sem o S, porque é simplesmente assim que eles falam.
"to me" ao invés de "with me", porque "to" é a preposição correta.
