Quem pode me dizer a diferença entre esses três verbos frasais?
Sei que o primeiro empregamos informalmente no sentido de "anotar por escrito com uma caneta ou lápis"; o segundo, parece-me mais formal que o primeiro e o terceiro, o mais formal de todos os três.
Quem pode me confirmar isso?

True, "to jot" refers to a ballpoint pen, pen, or pencil. However, the full meaning is "to write quickly with a ballpoint pen, pen, or pencil."

He jotted down her telephone number. (He quickly wrote down...)
"To set down" is somewhat formal.
It is set down in the constitution that elections will be held....
Nowhere is it set down that you have the right to.....
"To write down" is somewhere between "to jot down" and "to set down".
I wrote down the address. (no indication of speed, hurry, etc.)
I wrote down a list of the groceries we were going to need.
