O Paulo está correcto. Fancy one? Ou seja "Do you fancy one?" "One" está substituindo "beer." Em outras palavras, "Do you want a beer?'
To fancy a thing means to like a thing or to want a thing in British English. I think it's common there. People don't use this expression in the US but we understand what it means when a British person says it.
