Whenever I try to bring up that topic, she always bottles it up.
Sugestão:
Ela sempre se fecha quando eu tento conversar sobre aquele assunto.
She always keeps quiet when I try to talk about it.
She never says much when I try to talk about it.
Do Merriam-Webster:
Keep quiet: to not say anything or make any noise
Please keep quiet during the movie.
He thought about telling the police what he knew, but he decided to keep quiet. [=he decided not to say anything]
Bons estudos.

Whenever I bring up that/the subject she simply refuse to engage in the conversation.
Whenever I bring up that/the subject she don´t want to talk about it.
Whenever I bring up that/the subject she just says "I don´t want to talk about it now"; if I push more, she will say "I don´t want to talk about it anymore...
Every time I bring up that subject, she is unwilling to talk about it, she just don´t want to talk! you know, touchy issue - selective mutism and look the other way! the ole burying the head in the sand and pretending the problem doesn´t exist!
Every time I try to talk about that issue/matter, is the end of any meaningful conversation. Since every time she doesn´t like the way the conversation is going she changes the subject or retreats slowly in her shell. She goes into her monossilabic mode (abruptly or not)!
===========================================
And plenty of other ways to say that.

Seguindo a linha do Felipe:
She clamps up (= refuses to talk) whenever someone brings up the topic of her son's passing.
He clammed up (= stopped talking) the minute the officer walked into the room.
