Yep! You can say like this.

Another way to say almost the same thing would be: "I can't get you out of my mind".

"I always have you in mind" is often used in the sense of keeping in mind (considering) someone's needs or abilities in reference to work, for exemple, or in reference to preferences expressed by that person:

When looking at openings in our management team I always have you in mind.
I'm visiting some nice galleries here in New York, and keeping in mind your interest in fine prints.

It's probably not the most likely expression of personal affection.

As to the other three, none seem particularly good collocations. There is a certain awkwardness about them. I'd prefer "I can't get you out of my mind (head)" or "I can't stop thinking of you" for expressions of personal affection.
